Food Themed Bridal Shower … Cheesy Apple Spread is recipe number 1!

It seems my world truly revolves around food, as it does for my daughters!  Our oldest daughter, Megan, was married last year; we asked bridal shower guests to share a favorite recipe to insert in a cookbook.  This year daughter, Sarah, is also engaged and we did the same for her shower.  I  photocopied hand-written recipes of Grandmothers, Great-Grandmothers, and other family members no longer with us.  We also asked each guest to write a note the bride inside the cookbook.

As favors, we gave each guest a copy of three of Megan’s favorite dip/spread recipes which we also served at her shower.

The dips shared were Cheesy Apple Spread (today’s post), Hot Wing Dip, and Peach Salsa.   They are all family favorites.  The Cheesy Apple Spread recipe has been in my recipe box for at least 30 years.  Younger daughter, Sarah, loves this dip as well and prepared the dip for the shower.  Cheesy Apple Spread is truly an oldie but still a goodie!

Apple Dip

CHEESY APPLE SPREAD

8 ounces low-fat cream cheese, softened
1/2 cup low-fat mayonnaise
1/2 cup shredded cheddar cheese
1/2 cup chopped apple

Ingredients for Apple Dip
  • Blend together the cream cheese and mayonnaise.  Add shredded cheese and chopped apple.  Chill until ready to serve with Ritz or other favorite crackers.

Mexican Pizza…Friday night Vegetarian delight

Pal Maribeth first introduced me to this wonderful pizza. I love the combination of flavors and how easy (and relatively healthy) it is! The recipe can be modified to be vegan or gluten-free.

I baked the pizza on my pizza stone and found the baking time doubled. Bake until the bottom of the crust is light brown before removing from the oven to add the toppings and bake again.

MEXICAN PIZZA

1 can spicy fat-free, vegetarian refried beans
1 cup salsa
18 inch pizza crust
2 cups shredded romaine lettuce
4 medium thinly sliced green onions
1/4 cup ranch salad dressing
1 cup crushed tortilla chips (add more as desired)
1 cup shredded pepper jack or Monterey Jack cheese (or more if desired)

  • Heat oven to 450 degrees. Mix beans and 1/2 cup salsa in a medium bowl. Place crust on cookie sheet, then spread the bean mixture over crust. Bake until crisp, about 10 minutes.

  • Remove from oven, top with lettuce and green onions. Dollop with remaining salsa. Drizzle ranch dressing over. Top with chips and cheese. Bake approximately 2 minutes longer until cheese melts.

  • Cool slightly. I added fresh chopped avocado to the top with bowls of sour cream and salsa to add as the guests desire.  Slice and serve.

Nicaraguan Perrerreque (Corn Cake)

During my trip to Nicaragua, I had the opportunity to stay with a host family in San Ramon. My roommate, Sally, and I had the great pleasure of staying with Neyda and her family. We enjoyed many wonderful meals at Neyda’s home. One evening our ecotour group were treated to an evening of native Nicaraguan food and music. It was wonderful and highlighted by a light shower and a gorgeous rainbow.

The food served that evening included an unusual, sweet yet savory corn cake, baked in an outdoor wood-fired oven. The cake was baking when we arrived and like hungry baby birds, we all flocked to see what was in the oven. Our hostesses were kind enough to share the cake while it was still warm.  Heavenly! The three photos below were taken the night of our dinner in San Ramon.

Once returning home, the hunt was on for corn cake.  My sister-in-law, Betty, discovered a similar recipe and shared it with our ecotour group.  I baked the corn cake to share with my gal pals.  By chance, I also brought a bowl of fresh pineapple and found it to be a wonderful side dish to serve with the bread.  This recipe is slightly sweeter than the cake in Nicaragua, but delicious.  A winner!  However, I will continue my search to match the exact experience of our memorable Nicaraguan dinner.

NOTE: During our special evening in San Ramon we were also served the traditional Nicaraguan Nacatamal, a steamed corn cake filled with meat and vegetables, steamed in banana leaves. They, too, were fabulous and will be covered in a separate post at a later date.  Stay tuned!

Cathy’s Nicaraguan Corn Cake

PERERREQUE (CORN CAKE)

1 pound fine white corn meal  (I used regular white corn meal and ground again with the food processor)
1 pound crumbly cheese, grated finely (try Monterey Jack or Wensleydale)
1 cup sugar
2 tablespoons margarine
½ teaspoon baking soda
2 ½ cups milk

  • Heat oven to 350 degrees.  Mix the corn meal with the cheese and sugar. Cut/crumble in the margarine.   Mix the baking soda into a little of the milk and pour into the dry ingredients.   Add the remaining milk until the mixture is well blended.

  • Place the cake mixture into a greased baking pan. The mixture should be about 1 inch thick.

  • Bake for 30 to 40 minutes until the cake is golden brown. After this time, remove it from the oven, allow to cool and then cut into small pieces or squares before serving. I found the bread to be at it’s best when served warm, about an hour after baking.

Mexican Quinoa Casserole…Vegan/Vegetarian OR not!

I love quinoa! There, I’ve said it. I love quinoa salad and always looking for new ways to cook with this protein-rich, healthy grain. This Mexican Quinoa Casserole is now an honored member of my recipe collection. I made the recipe without the ground beef and taco seasoning, enjoying every wonderful bite! If you are vegan, make it without the ground beef and substitute a vegan cheese. If you’re a meat lover, go for the whole enchilada…um, I mean casserole!

MEXICAN QUINOA CASSEROLE

Mexican Quinoa Casserole served with sour cream

1 14.5 ounce can diced tomatoes
1 14.5 ounce can black beans, drained and rinsed
1 cup canned corn
1/4 cup green chiles
1/4 cup salsa
1/3 cup broth (vegetable or chicken)
1 cup toasted quinoa
1 pound lean ground beef (optional)
2 tablespoons taco seasoning mix (optional)
3/4 cup water (optional)
1 cup cheddar cheese, grated
sour cream
chopped fresh cilantro
wedge of fresh limes

  • Preheat oven to 400 degrees.
  • Mix together the tomatoes, black beans, corn, chiles, salsa, broth, and quinoa. Pour into a greased 2 quart baking dish and cover with baking lid or foil.
  • Bake for 30 minutes. Remove and stir and bake another 30 minutes.
  • While the quinoa is baking, brown the ground beef. Add taco seasoning and water. Simmer until water has evaporated. Stir in beef mixture with quinoa mixture. Top with grated cheese and brown under the broiler.
  • Serve with sides of sour cream, fresh cilantro and lime wedges.

Green Chile Pie…any day, any time

My brother and his wife told me about this dish 20+ years ago and I collected the recipe but never made it…until…this summer.  I had the great fortune of attending a yoga retreat in Copper Mountain Colorado this summer with wonderful gal pals.  Our friend, Sue, made this dish for dinner one evening served with a salad and fruit and VOILA…it was a hit.

This dish is so easy and so tasty….my mouth is watering.  My grown daughters and significant others are also in love with this dish that can be served for breakfast, lunch or dinner.  Only three ingredients.  Can you believe it?  You won’t be disappointed!

GREEN CHILE PIE

7 ounce can of green chiles
3/4 pound shredded, Monterey Jack Cheese
4 eggs

  • Grease a pie plate.  Spread chiles in bottom of pie plate.  Shred cheese and spread over the chiles.  Beat 4 eggs and pour evenly over the cheese.

  • Bake at 275 degrees for 1 hour.  Cut into wedges or squares and serve with any of the following:  salsa, sour cream, fresh cilantro, guacamole.

Turkey ala Mumba … just in time for Super Bowl parties

My dear sweet friend and neighbor, Maribeth, made this dish for our family the summer of 1997.  We had several family members in town and they were crazy for this dish.  My step-daughter Karen, even had the leftovers for breakfast the next day.

It has since become a family favorite, any time of year.  After Thanksgiving, I freeze any leftover turkey to use specifically for this casserole.  Leftover chicken would work equally as well.   I often make the casserole the day before and let the dish rest and enhance the flavors.

This would be a great dish for Super Bowl parties!

TURKEY ALA MUMBA

1 pound cooked turkey or chicken (3 cups)
2 15 oz. cans black beans, drained
2 medium onions, chopped
7 ounce can diced mild green chiles
1 can cream of chicken soup
3/4 cup chicken stock
1 teaspoon chopped garlic
1 tablespoon cumin powder
1 tablespoon chili powder
3 tablespoons fresh cilantro, chopped or 1 T. dried
1 pound low fat Monterey Jack or Cheddar Cheese, grated
12 6″ corn tortillas, cut in half
Sour Cream
Salsa

  • Preheat oven to 350F. Set aside 1/2 cup black beans. Combine turkey, remainder of black beans, onions, chiles, soup, stock, garlic and spices.
  • Layer 12 tortilla halves in 9×13″ pan. Cover with half of mixture, sprinkle on half of cheese. Repeat layers of tortillas, mixture and cheese. Sprinkle reserved black beans across top.

  • Bake 45 minutes until cheese is brown. Serve with sour cream and salsa. Freezes well if you are lucky enough to have leftovers!

French Onion Soup…made easy

French Onion Soup was introduced to me in my 20s at a restaurant on the Plaza in Kansas City, MO.  It was highly recommended and I have been in love with it ever since.  Thank goodness food processors were invented to help with the teary slicing duty to make this dish.

This recipe is so simple yet so yummy.  I have also added left over roast beef bits if I have them on hand.  Take it for a spin and see if it is a hit at your house!

 FRENCH ONION SOUP

1/4 cup butter or margarine
4 cups thinly sliced onion
4 cans (10.5 ounce) condensed beef broth
1 teaspoon salt
4 to 6 slices French bread (1″ thick)
2 tablespoons grated Parmesan cheese

  • Heat butter in large skillet. Add onions and sauté’; stirring until golden–about 8 minutes.
  • Combine onion, broth, and salt in medium saucepan; bring to boiling. Reduce heat and simmer, covered, 30 minutes.
  • Meanwhile, toast bread slices in broiler until browned on both sides.
  • Sprinkle one side of each with grated cheese; run under broiler about 1 minute, or until cheese is bubbly.
  • To serve: Pour soup into a tureen or individual soup bowls. Float toast, cheese side up, on soup.

Traditional Midwest Red Chili

Cold weather means it’s chili time! My mother’s traditional red chili is still a favorite of mine, but I confess I now used canned, diced or crushed tomatoes instead of whole tomatoes.

When I was a child, the only thing served with chili was saltines.  Who knew there were so many ways to serve Chili (or is it Chile?).

Now I have been awakened the versatility of chili and how to serve it. Here are a few of my favorites:

  • Chili served on top a baked potato with shredded cheese (add sour cream if desired)
  • Chili served on top of a half of peeled and seeded avocado
  • Chili with crushed tortilla chips, shredded cheese, green onions
  • Chili with cornbread
  • Chili on top of hot dogs with onion

What are unique ways that you serve chili?

Today, I am sharing my Mother’s chili recipe. Add as much chili powder or crushed peppers as desired and enjoy!

MOM’S RED CHILI

1 pound ground beef
1 medium onion, chopped
1/2 cup chopped green bell pepper
1 can chili beans
1 quart tomatoes (I prefer crushed)
1 tablespoon sugar
chili powder to taste
salt & pepper

  • Brown and drain hamburger. Add onions and cook until tender.
  • Add rest of ingredients and simmer, covered, for 1 hour.
Red Chili simmers
  • Serve naked (as is) or with chopped onions, cheese, tortilla chips, crackers or try one of the versions listed above.
