Beef Macaroni Skillet–blast from the past!

Beef Macaroni Skillet, a  one skillet meal, was a regular menu item when my children were young.  It was a quick meal that I could put together after work.  I haven’t made it in over 20 years and it was a fun walk down memory lane.

My older daughter, Megan, and her girls were here to experience it.  Megan didn’t remember it but liked it as did her two year old daughter.  The five year old didn’t care for it, but then again, she’s in a phase of only liking what she knows.

The original recipe card is in my handwriting, probably around the age of 11 or 12, when I started my recipe box.  It’s funny to look back at it and find humor in the reference to ‘this main dish’.

BEEF MACARONI SKILLET

1 pound ground beef
1 medium onion, chopped
3 cups tomato juice (add more if it becomes too dry)
1 tablespoon Worcestershire Sauce
1 tablespoon vinegar
1/2-1 teaspoon salt
1/8 teaspoon pepper
1 teaspoon dry mustard
1 cup uncooked elbow macaroni

  • Brown beef and onion in a skillet.  Drain fat.
  • Add remaining ingredients and cook, covered, until the macaroni is cooked, about 20 minutes.  Stir occasionally while cooking to prevent from sticking.

Hamburger Soup

Hamburger Soup is quick, simple and delicious.  Enough said.

HAMBURGER SOUP

1 lb. lean ground beef
1 onion , diced
2 cloves garlic , minced
2 medium potatoes, peeled and diced
4 cups beef broth
1 can (28 oz) diced tomatoes with juice
1 can condensed tomato soup
2 teaspoons Worcestershire sauce
1 teaspoon Italian seasoning
1 bay leaf
salt and pepper to taste
3 cups mixed vegetables, fresh or frozen (I used carrots, celery, corn & peas)

  • Brown onion, ground beef and garlic until no pink remains. Drain any fat.
  • Add potatoes, broth, tomatoes, tomato soup, Worcestershire sauce, seasoning and bay leaves. Simmer covered 10 minutes.
  • Stir in vegetables. Simmer 15-20 minutes or until potatoes are tender.

Honeyed Ham Steak

Honeyed Ham Steak was one of the first recipes I used early in our marriage. It was quick, economical, and easy to prepare after work. Pair with a starch and a vegetable or salad.  This time I served with Tangy Cauliflower (recipe to post Friday, April 26).

HONEYED HAM STEAK

Servings: 2-4
2 tablespoons prepared mustard
2 tablespoons honey
1 tablespoon butter
1 fully cooked smoked ham center slice, cut 1/2 inch thick (1 pound)

  • Heat first three ingredients in skillet, over medium heat, until blended.
  • Add ham; cook 5 minutes on each side or until heated and browned to your liking.
  • Remove heat to platter; pour mixture over ham.
