Fresh Peach Cobbler…summertime favorite

Fresh peaches are a summer treat!  I have fond memories, as a kid, of biting into a fresh peach and have the juice run down my arms and all over my face. I was a sticky mess, but loving that peach!

Colorado peaches are some of the best and I’m lucky enough to live in the great state that produces them. To date, I’ve not seen Colorado peaches at the market but Costco has had wonderful peaches this summer. What better dessert to serve visiting family topped with vanilla ice cream! The recipe is from my tried and true Farm Journal Country Cookbook, 1972 a gift from the folks at Farm Journal many years ago when I worked in Agri-Marketing for an ad agency in St. Joe, MO. The cookbook has seen a lot of love and even though it’s spine is broken, it continues to support my love of good home-cooking!

Our Book Club potluck was coming up, featuring the book Proof of Heaven a Neurosurgeon’s Journey into the Afterlife by Eben Alexander, M.D.  Our potluck theme was ‘what would you have for your last meal?’  I tripled the recipe so I could have enough Cobbler for the Book Club and for visiting family.  It was hit with both groups. It’s delicious (even if I do say so myself) and a wonderful summer treat.

FRESH PEACH COBBLER

Peach Mixture:

1 1/2 tablespoons cornstarch
1/4 to 1/3 cup brown sugar, firmly packed
1/2 cup water
4 cups sweetened sliced peeled peaches
1 tablespoon butter
1 tablespoon lemon juice

  • Mix cornstarch, brown sugar, and water.  Add peaches and cook until mixture is thickened, about 15 minutes.
  • Add butter and lemon juice.  Pour into a greased 8″ round or square baking dish.

Batter Topping:

1/2 cup sifted flour
1/2 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons soft butter
1 egg, slightly beaten

Combine flour, sugar, baking powder, salt, butter and egg.  Beat until butter is smooth.

Drop spoonfuls of Batter Topping over hot peach mixture.  Sprinkle with 1 tablespoon white sugar.

Bake in hot oven (400 degrees) 40 to 50 minutes.  Serve warm, in bowls, with vanilla ice cream.

Tenderloin Sandwiches…just the way Mom used to make

Saturday night dinner at the Smaha Farm often consisted of tenderloin sandwiches, still one of my all-time favorites.  My girls have joined the fan club.  Tenderloin sandwiches are easy to find in restaurants in Iowa but I haven’t seen one on the menu, yet, in Colorado.  In Iowa, the tenderloin is typically twice the size of the bun.  I prefer to keep mine bun size.

Mmmm….sweet Saturday night memories around the kitchen table.

PORK TENDERLOIN SANDWICHES

Boneless pork chops, thin
Beaten Egg
Fine bread crumbs (or cracker crumbs)
Canola Oil
Salt & Pepper

  • Remove fat from pork chops.  Pound chops with meat tenderizer until thin (tenderloin).
  • Beat egg(s) and place in separate bowl.  Pour fine bread crumbs, salt and pepper into second bowl.
  • Heat oil in large skillet.
  • Dip each pork tenderloin in egg wash and then in bread crumbs.
  • Place tenderloin in hot oil and brown well on both sides.  When cooked through, remove to plate with paper towels until ready to serve.

 

Serve on bun with traditional mayonnaise, lettuce and dill pickle slices (or whatever suits your taste).

Sangria, Mock and Not

Sangria reminds me of summer, tapas, and good times with friends.  It’s refreshing, light, fruity and delicious.  History states that Sangria was first served at the 1964 World’s Fair in New York.  While interesting, I truly expected Sangria to be the drink of Spanish Royalty (or something equally impressive).

Nonetheless, it’s delicioso!  This time, I made a mock Sangria (without alcohol) as well as the real deal.  I enjoyed them both.

 

SANGRIA

1.5L of chilled red wine
3 cups prepared lemonade
1 cup orange juice
4 tablespoons brandy
2 cups chilled club soda
sliced oranges, limes, lemons, apples

In a large pitcher, combine the wine, brandy, lemonade, and orange juice.  Add the fruit slices and refrigerate until chilled.

When ready to serve, add the club soda.  Garnish glass with slice of lime (or other citrus)

MOCK SANGRIA

2 cups orange juice
1 cup white grape juice
1 cup cranberry juice
1 liter bottle lemon-lime carbonated beverage
ice cubes
sliced lemons, oranges, limes

  • In a large pitcher, stir the juices together.  Chill.
  • When ready to serve, add the lemon-lime beverage and stir gently. Fill glasses with ice, then sangria then slices of fruit.  Enjoy!

Old Fashioned Potato Salad…just like Mom used to make

Potato Salad was a must-have side dish for every picnic and barbecue.  My Mother made THE BEST potato salad ever and I can replicate it pretty well. There are no measurements, just a ‘pinch of this and a pinch of that’ type of preparation. When my Mother made it, she used onions from the garden and eggs from our farm.

My Potato Salad is pretty darn good, but you can never top what Mom could do!

POTATO SALAD

SALAD:
Boiled, peeled and cubed potatoes
Boiled, peeled and chopped eggs
chopped green onions (or sweet white onion)
celery seed (or chopped celery)

DRESSING:
mayonnaise
milk
prepared mustard
sugar
salt

  • Mix together potatoes, eggs, onions (and celery if desired).  Sprinkle with celery seed.
  • In separate bowl, mix mayonnaise with enough milk to thin to consistency of salad dressing. Add sugar and salt to taste.
  • Refrigerate for several hours before serving. The flavor is best the next day.

Salsa Chicken ala Crockpot

Salsa Chicken in the crockpot is a simple, hearty dish and perfect to serve for a crowd. You can easily modify the recipe to match your taste, adding more vegetables, hotter chiles, etc.

I’m trying to avoid simple carbs so I served over quinoa with sliced fresh tomatoes. It would be fun to serve the chicken in a buffet with a variety of serving options (outlined below) to allow the guest to make their own finished product.

SALSA CHICKEN IN THE CROCKPOT

2 pounds chicken breasts (if large, cut in half)
1 can whole kernel corn, drained
1 can black beans, drained
7 oz. can diced green chiles
16 ounce jar of salsa
1 teaspoon dried cilantro
salt and pepper

  • Place chicken breasts in bottom of crock pot and season with salt and pepper.
  • Add corn, beans, chiles and salsa.  Sprinkle with cilantro.
  • Cover and cook on high for 5-6 hours or 8 hours on low.
  • About an hour before serving, shred the chicken in the crockpot and let simmer until ready to serve.

  • Serve with fresh tomatoes, avocado, sour cream, shredded cheese, or salsa as you like.
  • Serving options:  Use as filling in burritos or tacos.  Serve over quinoa, baked potato, rice or noodles.

Southwestern Roll-Ups

Tortilla roll-ups have been a favorite of mine since the early ’80s. It’s fun to experiment and add ingredients that appeal to your specific taste. Daughter, Megan, made these for Sarah’s baby shower earlier this spring, adding Iowa dried beef (not the canned stuff) to the delight of our guests.

A chilled tortilla roll-up would be a great summer snack or sandwich replacement.

SOUTHWESTERN ROLL UPS

5 large flour tortillas (we used spinach tortillas)
1 bunch green onions, chopped
4 ounces chopped green chiles, drained
8 ounces cream cheese, softened
8 ounces sour cream
1/2 pound Cheddar cheese, shredded
salt and pepper to taste
dried beef, corned beef, turkey (optional)
salsa, sour cream, guacamole

  • Combine green onions, green chiles, cream cheese, sour cream, cheddar cheese and salt and pepper with an electric mixer until combined. Spread mixture thinly and evenly over tortillas to within 1/8-inch of edge.
  • Place slices of dried beef, corned beef or turkey on top (optional).
  • Roll up and wrap each tortilla in plastic wrap. Refrigerate for a minimum of an hour or as long as overnight.
  • Immediately before serving,  slice in 3/4 inch rounds and arrange on serving plate. Serve with salsa, guacamole and/or sour cream.

Strawberry Shortcake…sweet summer delight!

Strawberry season is here.  Bring on the shortcake!  This recipe is from an old Czech cookbook that I’ve cherished for years.  The cake is yummy enough to eat by itself, but topped with fresh strawberries and whipped cream is to die for.

My girls love the cake more than the strawberries…I’m partial to the entire package.  I have been know to drown the cake and berries in milk, something I picked up from some elderly Norwegian friends back in Iowa.

However you like it, try it.  It’s strawberry time!

STRAWBERRY SHORTCAKE

2 eggs, beaten
1 cup sugar
1/2 cup butter
1 cup milk
2 teaspoons baking powder
2 cups flour
1/4 teaspoon salt
1 teaspoon vanilla

  • Preheat oven to 350 degrees.  Mix all ingredients together and bake in 9×9″ baking pan for 45 minutes or until baked through.
  • Cut into squares and top with fresh sliced strawberries and whipped cream.

BLATO (Bacon, Lettuce, Avocado, Tomato, Onion) Sandwich Bar

Family was visiting and we were gathering for lunch at my house.  It occurred to me that a BLT, or better yet at BLATO, bar would be fun.  Standing over the stove frying endless pieces of bacon didn’t sound appealing so I turned to baked bacon instead.

Early that morning I baked 30 pieces of bacon and it was a breeze!  I also washed and prepared the lettuce and sliced the onion for later.  Immediately before serving, I sliced the avocado and tomato.  I provided 2 types of bread along with the option of toasting the bread in the toaster oven and provided condiments of mayonnaise, mustard, ketchup.  In addition, I served sliced turkey and cheese for those that may not like bacon OR prefer to make a mega-sandwich with all of the above!

For the vegetarian or vegan in the group, they can still partake with a wonderful veggie sandwich!

BAKED BACON

  • Heat oven to 400 degrees F.
  • Place a baking rack in a large baking, or cookie, sheet. The baking rack allows the drippings to fall away from the bacon.  Place bacon strips on baking rack.  Bake for 10-20 minutes depending on thickness of the bacon.  I used thick sliced bacon that took 16-20 minutes to bake.  For 30 slices of bacon, I baked 10-12 slices per pan.
  • Remove bacon and pat excess drippings with paper towel.  Set aside until time to serve.

Oh, the lowly radish sandwich…

Do you have a favorite childhood memory of food that, to most people, seems utterly ridiculous (and perhaps disgusting)?  Perhaps my lowly radish sandwich seems that way to you.

Growing up my Mother had a wonderful garden and I loved the fresh radish sandwich my Mother would make for me.  Simple but pleasing.  Today another walk down memory lane.  This radish sandwich is for you Mom!

Tangy Mustard Cauliflower

The first microwave I owned was a gift from my husband and the microwave was the size of a small refrigerator.  The microwave was so complex (or so we thought) that we attended three complimentary classes at the local Appliance Store.  Looking back, it cracks me up that it was considered so cutting edge.

Microwave cooking changed my life, making leftovers an almost perfect ‘do-over’ of the original meal.

This recipe was one of many shared with us in our classes.  I made it often early in our marriage but forgot about it until a recent conversation with my sister-in-law, Donna. It isn’t the healthiest vegetable recipe, but delicious and provided me with this fun walk down memory lane.

TANGY MUSTARD CAULIFLOWER

Servings: 6

1 medium head cauliflower
2 tablespoons water
1/2 cup mayonnaise
1 teaspoon finely chopped onion
1 teaspoon prepared mustard
1/2 cup shredded cheese

  • Place cauliflower in casserole. Add water and cover with lid or plastic wrap. Microwave on High for 8-9 minutes, or until tender crisp.
  • Combine mayonnaise, onion and mustard in small mixing bowl. Spoon mustard sauce on top of cauliflower.
  • Sprinkle with cheese.
  • Microwave for 1-2 minutes to heat topping and melt cheese. Let stand 2 minutes.
