Creamy Butternut Squash and Sausage Soup

This 30 minute, one pot soup is easy and delicious. I love a recipe that comes together so easily and delivers the flavor!

Creamy Butternut Squash and Sausage Soup

INGREDIENTS:
  • 15 oz spicy Italian sausage crumbled
  • 1 teaspoon Italian seasoning or Herbs from Provence
  • 1 tablespoon fresh thyme (no sprigs, just leaves)
  • red pepper flakes to taste (if sausage is spicy, you may want to skip the pepper flakes)
  • 1 cup orzo uncooked
  • 4 cloves garlic minced
  • 5 cups chicken stock
  • 10 oz butternut squash peeled and cubed
  • 5 oz fresh spinach
  • ½ cup heavy cream (I used half and half)
  • ⅓ cup Parmesan cheese shaved, shredded, or grated (for garnish)
DIRECTIONS:
  1. Add crumbled Italian sausage, Italian seasoning, a generous amount of fresh thyme (no sprigs, just leaves), and red pepper flakes to a large saucepan. Cook on medium heat, regularly stirring to break the sausage.
  2. Once the sausage released juices and is half cooked, add 1 cup of uncooked orzo and minced garlic, and cook, constantly stirring, for about 2 minutes on medium heat to brown the orzo.
  3. Add 5 cups of chicken stock and cubed butternut squash, stir everything well, cover with the lid, bring to a boil, reduce to visible simmer, and cook for about 5 or 10 minutes until the orzo and butternut squash is cooked.
  4. Add spinach to the soup, cover with the lid and let it wilt on low heat, occasionally stirring.
  5. Once the spinach has wilted, remove the soup from the heat and add heavy cream. Stir everything and season with salt and pepper. Add more chicken stock (or water) if the soup is too dense. Add more red pepper flakes, if you like. Top with Parmesan cheese (shaved, shredded, or grated) and fresh thyme.

Peach & Prosciutto Flatbread with Balsamic Reduction

Each peach season I look forward to a sweet and savory flatbread or pizza with peach and prosciutto. This time I took the easy way out with store-bought flat bread. The original recipe called for ricotta, but I’m just not a fan. The mozzarella and parmesan were perfect for me. And, don’t forget the balsamic reduction! A yummy easy dinner for hot summer nights!

Peach & Prosciutto Flatbread with Balsamic Reduction

INGREDIENTS:
  • Stonefire Artisan Flatbread (I used one for this recipe)
  • 2 slices fresh mozzarella, diced into small cubes
  • 1 oz. parmesan cheese, shredded (1/4 cup)
  • 1 medium fresh peaches
  • balsamic reduction
  • 1/8 cup slightly packed fresh basil leaves, chopped (or to taste)
DIRECTIONS:
  1. Preheat oven to 400 degrees.
  2. Layer prosciutto over crust into an even layer, aligning pieces side by side (if they overlap slightly that’s fine). Sprinkle with mozzarella cubes and parmesan cheese.
  3. Cut peaches in half and core. Laying peaches with sliced side down, cut peaches into slices (I thinly sliced). Layer peaches evenly over pizza.
  4. Bake 10 minutes or until edges are lightly golden.
  5. Remove from oven, sprinkle with fresh basil, and drizzle with balsamic reduction. Cut into slices and serve warm.

    • There’s no need to peel the peaches before adding them to the pizza!

Italian Sausage Stuffed Summer Squash

Last year I had many yellow squash in my garden. While I like roasting vegetables or making lemon yellow squash bread, I needed a new recipe. This recipe is so delicious! I doubled the recipe and the leftovers were just as good as when it was first served. The photo makes it look like I burned the squash, but I did not and it was perfect. You can bake for a lesser time as well. I also experimented with delicata squash and found the rind was too tough. You could easily substitute zucchini for the yellow squash.

Italian Sausage Stuffed Summer Squash

INGREDIENTS:
  • 4 squash halves
  • 1 diced onion
  • 1 red bell pepper diced
  • 4 cloves garlic crushed
  • 2 tablespoon olive oil
  • ½ teaspoon fresh ground black pepper
  • 1 egg
  • 2 links of Italian sausage hot or sweet
  • ½ cup panko bread crumbs
  • ½ C parmesan cheese
  • ½ C shredding cheese Mexican mix or low monster mozzarella
  • 1 teaspoon oregano
  • ½ teaspoon cumin
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon fresh ground pepper
  • ¼ teaspoon kosher salt
  • garnish with fresh basil or fresh parsley
DIRECTIONS:
  1. tart by cooking the sausage in a nonstick frying pan. Sauté on medium heat until they are lightly browned about 6 to 7 minutes. Remove the sausage from the frying pan and place on a paper towel lined plate.
  2. Preheat the oven to 350.
  3. Sauté the finely chopped onions, crushed garlic and diced bell pepper in the drippings from the sausage. Cook until the onions are translucent and the peppers have softened about 5 to 6 minutes.
  4. Next, add the oregano, cumin, and red pepper flakes to the pan and mix thoroughly with the onions and peppers. Sauté for two minutes to bring out the flavors of the spices.
  5. Place the sausage, peppers and onions mixture into a medium size bowl. Mix in the breadcrumbs, shredded cheese, parmesan cheese and egg and set the mixture aside.
  6. Line a cookie sheet with tinfoil or parchment paper for easier cleanup.
  7. Cut the squash down the middle lengthwise. Using a spoon to scoop out the seedy interior of the squash and discard. Place the squash cut side up on the cookie sheet.
  8. Scoop the sausage mixture in to the wells of the squash.
  9. Bake for approximately 40 to 60 minutes. It depends on the size of the squash.
  10. Notes
  11. You want to use both a Parmesan cheese and some kind of shredded cheese. I usually have both a nice brick of Parmesan Reggiano and the cheap crumbled cheese in the refrigerator. For this recipe I find that the crumbled pram works just fine to add that salty nutty flavor, so I save the nice parm for other dishes.
  12. I have used both shredded low moisture mozzarella and cheddar Colby Jack (“Mexican cheese mix”) shredded cheese. They’re both good and I actually like them Mexican cheese mix the best, but don’t be afraid to experiment and just use what’s in your house.

Tuscan Chicken

Tuscan Chicken is an easy, flavorful dinner fit for entertaining. I served this dish over Trader Joe’s Multigrain Blend with Vegetables and liked the combination. Serving with a pasta or potatoes would be equally delicious. I had enough sauce but think doubling the sauce would be even better.

Tuscan Chicken

INGREDIENTS:
  • 2 (8-ounce) boneless skinless chicken breasts 
  • 1 cup roughly chopped fresh baby spinach
  • 1/2 cup heavy whipping cream (I used half & half)
  • 1/2 cup finely grated parmesan cheese, plus more for serving 
  • 1/4 cup chopped sun-dried tomatoes (blot off excess oil)
  • 5 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons salted butter
  • 1 teaspoon dried oregano
  • salt and pepper, to taste
DIRECTIONS:
  1. Prepare Chicken: Cut each chicken breast horizontally so it’s half as thick as before, resulting in 4 thinner pieces. Pat them dry with paper towels. Generously season both sides of each chicken piece with salt and pepper.
  2. Sear Chicken: Heat 10-inch sauté pan over medium to medium-high heat until hot. Add olive oil to cover pan, and place chicken breasts in single layer over oil. Cook until each side is golden brown, 4 to 5 minutes per side. When chicken is cooked through, transfer to large plate. Work in batches if your pan is not large enough to hold all at once.
  3. Make Sauce: Reduce to low heat. Add heavy whipping cream, butter, and parmesan cheese to pan. Stir until butter and cheese are melted, scraping up any browned bits on bottom of pan. Increase to medium heat and bring to simmer. Stir in spinach until wilted. Stir in minced garlic and oregano until well-mixed.
  4. Return Chicken & Serve: Transfer chicken back to pan, leaving any liquid on plate, and simmer for 1 minute. Top with sun-dried tomatoes. Turn off heat. Serve, and optionally top with additional grated parmesan cheese.

Avocado Bread

Avocados are a favorite of mine and this recipe was intriguing. With a very ripe avocado on hand, I decided to try it and was not disappointed. The baking time was 25 minutes but I found it to be too soft inside and baked for another 8-10 minutes (picture on the right). It was delicious as a side to my meal and would be interesting to make into a sandwich. If you have a perfectly ripe avocado and don’t know what to make, this is worth a try!

Avocado Bread

INGREDIENTS:
  • 1 avocado, mashed
  • 1 egg, beaten
  • 1 cup shredded Parmesan cheese
  • Everything but the bagel seasoning (optional)
DIRECTIONS:
  1. Preheat oven to 400 degrees Fahrenheit.
  2. Combine avocado, egg and cheese together.
  3. Form into two patties on greased baking sheet. Sprinkle with seasoning.
  4. Bake for 25 -35 minutes. (I baked for a little longer–see difference between 25 minutes and 35 minutes above)

Pasta with Bacon Cream Sauce

Pasta with Bacon Cream Sauce is a family favorite, one I have made for well over 30 years. When I was working and the kids were at home, this was an easy weeknight dinner that pleased everyone. Now that my daughters have families of their own, this is a favorite of the next generation. Feel free to increase the amount of bacon or cheese to your liking.

Pasta with Bacon Cream Sauce

INGREDIENTS:
  • 1 lb. vermicelli or very thin spaghetti
  • 1/4 pound bacon, cut into 1/2″ pieces
  • 2 tablespoons butter
  • 6 scallions, trimmed and cut into strips
  • 1 cup heavy cream
  • ladle of pasta water
  • 1/2 teaspoon coarse black pepper
  • 2/3 cup grated Parmesan cheese
  • 1 tablespoon chopped parsley
DIRECTIONS:
  1. Saute bacon until crisp. Remove bacon; add butter and scallions; saute 2 to 3 minutes. Stir in cream, pasta water and pepper. Hold over low heat.
  2. Cook and drain pasta. Add to cream mixture; toss together.
  3. Add all but 1 tablespoon bacon, 1/3 cup Parmesan cheese and parsley, toss.
  4. Serve at once, garnished with bacon and remaining Parmesan cheese.

Lemon Garlic Kale Salad

Lemon Garlic Kale Salad is a favorite salad, especially when I had fresh kale from my garden but it is wonderful with kale from the grocery store, as well. My good friend, Maribeth, introduced this recipe to me a few years ago and it continues to be a favorite.

Lemon Garlic Kale Salad

INGREDIENTS:
  • 2 cups almond slices, toasted
  • 1/3 cup freshly squeezed lemon Juice (2-4 lemons)
  • Kosher Salt
  • 1 1/2 cups extra-virgin olive oil
  • 4 cloves garlic, crushed with the flat side of a knife, peeled and left whole
  • 10 to 12 ounces washed and dried kale leaves, thick stems removed
  • 1 1/2 cups freshly grated Parmesan
DIRECTIONS:
  1. In a toaster oven or oven, toast almonds until golden brown and fragrant. Set aside to cool.
  2. In a bowl, combine lemon juice and 1 heaping teaspoon salt.
  3. Slowly whisk in olive oil.
  4. Add garlic cloves and set aside to steep.
  5. Working in batches, cut the kale into thin ribbons: gather a large handful of leaves, bunch together tightly, and use the other hand to slice into 1/4 inch thick pieces. This need not be done very precisely or neatly; the idea is to end up with a kind of slaw. (Recipe can be made up to this point 1 day ahead. Keep kale and dressing refrigerated separately.)
  6. Place chopped kale in a very large bowl. Sprinkle with almonds and then cheese.
  7. Remove and discard garlic cloves from dressing. Pour half the dressing over the salad and toss. Taste for dressin and salt and add more as needed, tossing to coat thoroughly. Serve within 1 hour.

NOTE: I typically make a much smaller salad. The dressing keeps well in the refrigerator. I have also minced the garlic and added to the dressing.

Pesto Schmesto…on Pizza and Caprese Salad

Have I told you I love pesto?  Fresh ingredients and CHEESE…what’s not to like?  My basil did well this year and I’ve enjoyed a few batches of this tasty delight. This year I tried a recipe from Iowa Girl Eats blog.  After all, a recipe originating from a cook in my home state of Iowa gets my attention. I like her recipe because it’s small in proportions but you can double, triple, etc. based on your desired volume.

PESTO SCHMESTO

25-28 fresh basil leaves
2 tablespoons pine nuts
2 tablespoons freshly grated Parmesan cheese
1 garlic clove
salt & pepper to salt
2 tablespoons extra virgin olive oil

  • Combine the basil, pine nuts, Parmesan cheese, garlic, salt and pepper in the food processor.
  • Pulse until finely ground.
  • Slowly stream in the olive oil and pulse until smooth.

PESTO PIZZA

Udi’s GF pizza crust (or precooked crust of your liking)
Pesto
Thinly sliced zucchini
Slow roast tomatoes or sun-dried tomatoes
Turkey or chicken (or omit for vegetarian pizza)
Shredded cheese (Monterey Jack or Mozzarella)

  • Layer the ingredients on the pizza crust in the order given.
  • Bake per crust instructions until pizza is hot, cheese is melted.  YUMMMMM.
