Raspberry Cranberry Relish

Cranberry relish for the holidays is a tradition.  I’ve made cooked and raw cranberry sauce, but the addition of raspberries, is a nice change. Cranberry relish is great with the big meal but also great on a leftover turkey sandwich.

RASPBERRY CRANBERRY RELISH

1 1/3 cup sugar
1 cup water
3 cups fresh cranberries
1 cup frozen raspberries
1 teaspoon vanilla extract

  • In a saucepan, combine ALL ingredients.
  • Bring to a simmer and cook for 10 minutes, stirring frequently.
  • After 10 minutes, mash up berries using a potato masher or fork or something to mash up the berries. You can mash up all the berries, some, or none, depending on how chunky you like your cranberry sauce.
  • Once mashed cook for 5 more minutes.
  • Allow mixture to cool completely.
  • Serve Chilled.
  • Store in an air tight container up to 5 days.

    Peach Raspberry Cobbler

    Palisade (Colorado) peaches are divine and something our family looks forward to each year.  Due to an early freeze, we weren’t sure we could purchase peaches.  A local high school band had a fundraiser with peaches and we purchased 3 boxes of the most beautiful peaches.

    This recipe for cobbler combines my favorite two fruits, raspberry and peach. My mouth waters just thinking about it.  Fresh fruit is the best but I have also made from frozen peaches with great results.

    What will I do with the rest of the peaches?   Oh, wonderful peach salsa!

    PEACH RASPBERRY COBBLER

    8 medium sized peaches (about 2 lb. or 4 cups), ripe peeled and sliced
    1 1/4 cups sugar
    2 tablespoons lemon juice
    1/2 teaspoon ground cinnamon
    2 tablespoons cornstarch
    2 cups raspberries, rinsed and drained
    1 cup flour
    1/2 cup butter, softened
    1/4 teaspoon ground nutmeg

    • Preheat oven to 375 degrees. Grease a shallow 1.5 to 2 quart baking dish.
    • Mix together peaches, 1/2 cup sugar, lemon juice, cornstarch, and cinnamon. Pour into prepared baking dish.  Sprinkle raspberries over the peaches.
    • In a food processor or a bowl, mix together flour, 3/4 c. sugar, butter and nutmeg until it has the texture of coarse oatmeal.  Crumble over the fruit.
    • Bake until bubbling in the center and golden brown on top, about 45 -60 minutes.
    • Cool for at least 10 minutes.  Best served warm with vanilla ice cream.

    Lemon Raspberry Streusel Bars

    Raspberries may very well be my favorite fruit and would certainly be on my ‘last dinner’ list.  This recipe started out to be Lemon Blueberry Bars as the original recipe stated.  Midway through making the bars, I realized the frozen blueberries were off, so quickly switched to raspberries that I had in the freezer.  Frankly, I love the results.  Even the nutmeg called for in the original recipe suited the raspberries.

    LEMON RASPBERRY STREUSEL BARS

    yield: 24 BARS

    CRUST:
    2 cups all-purpose flour
    2 tablespoons granulated white sugar
    2 teaspoons grated lemon zest
    pinch of salt
    1/2 cup (1 stick) butter, chilled and cut into small pieces
    1 large egg
    1 teaspoon vanilla extract

    FILLING:
    2 cups fresh raspberries (I thawed frozen raspberries)
    1/4 cup granulated white sugar
    1/8 teaspoon ground nutmeg

    TOPPING:
    5 Tablespoons butter, at room temperature
    1/2 cup (packed) brown sugar
    3/4 cup all-purpose flour

    • Preheat oven to 400°F. Spray a 9×13-inch pyrex pan with nonstick spray.
    • Prepare the crust: In a medium bowl, stir together the flour, sugar, zest and salt. Cut in the butter until the mixture resembles coarse crumbs.
    • In a separate bowl, beat the egg and vanilla together; stir into the crumb mixture until a dough forms. Press into the bottom of the prepared pan. Bake 12 to 15 minutes until golden. Remove from oven and set aside to cool slightly. (Keep the oven on)
    • Sprinkle raspberries over the crust. In a small bowl, combine the 1/4 cup sugar and nutmeg; sprinkle over the raspberries.
    • Prepare the topping: In a medium bowl, use a rubber spatula to cream together the 5 tablespoons butter and brown sugar until smooth. Mix in the flour, so that the mixture is crumbly, like streusel. Sprinkle over the raspberry layer.
    • Bake for 20 to 25 minutes until browned. Cool.

    Raspberry Lemon Cupcakes

    Two of my favorite flavors…raspberry and lemon…together they are heaven. When we were planning older daughter Megan’s baby shower we made these cupcakes.  The cupcakes (which you cannot see) were divine and the icing tasted wonderful, although it didn’t look as wonderful as I would have liked. The icing had a lumpy look to it but not in taste or texture.

    The theme of the shower surrounded children’s books so we purchased edible children’s book toppers on Etsy. Adorable!

    I’ll make the cupcakes again but I’ll play with the icing to get it just right!

    RASPBERRY LEMON CUPCAKES

    Yield: 24 regular cupcakes

    For the Cake:
    2 1/4 cups cake flour
    1 tablespoon baking powder
    1/2 teaspoon salt
    1 1/4 cups buttermilk
    4 large egg whites
    1 1/2 cups sugar
    lemon zest from two large lemons
    1/2 cup unsalted butter, at room temperature
    1 teaspoon vanilla
    1/2 teaspoon lemon extract

    For the Frosting:
    1/2 to 2/3 cup fresh raspberries (or frozen, thawed) (use 2 cups for 1.5x recipe of frosting)
    1/2 cup salted butter, at room temperature
    1/2 cup unsalted butter, at room temperature
    1/2 cup shortening
    1 tablespoon vanilla
    3 cups powdered sugar
    1-3 tablespoons milk, if needed

    To Make the Cake:

    • Preheat the oven to 350˚F.  Position the rack to the center of the oven.  Line cupcake pans with paper liners.
    • In a medium bowl, sift together the flour, baking powder and salt; set aside.  In another medium bowl, whisk together the milk and egg whites until well blended.
    • Place the sugar and lemon zest in a large mixer bowl and rub together with your fingers until the zest has moistened all the sugar.  Use the paddle attachment to beat the butter in at medium speed for 3 minutes, until very light.
    • Add in the extracts and then one third of the flour mixture, while continuing to beat on medium speed.
    • Mix in half of the milk-egg mixture, then half of the remaining dry ingredients.  Beat in the rest of the milk and eggs until fully incorporated, then mix in the remaining of the dry ingredients.  Beat at medium speed for a full 2 minutes to aerate.  Evenly distribute the batter into the cupcake pans.
    • Bake for 18-22 minutes (for regular cupcakes) or 10-12 minutes (for miniature cupcakes).  The cupcakes are done when they pass the toothpick test and are springy to the touch.   Cool completely on a wire rack.

    To Make the frosting:

    • Puree the raspberries in a blender and then push through a fine mesh strainer to discard the seeds; set aside. Cream together the butter and shortening in a large mixing bowl, with the paddle attachment.
    • Beat in the vanilla and most of the raspberry puree, until fully combined.
    • Stir in the sugar 1/2 cup at a time, mixing thoroughly after each addition, until reaching desired consistency.  Use more or less sugar as needed, and add more raspberry puree to taste.  If the frosting is too thick, beat in milk one tablespoon at a time.

    Patriotic Brownie Fruit Dessert…Gluten Free or Not

    Krusteaz’s Double Chocolate Gluten-Free Brownie mix is an absolute favorite of mine, first discovered at Costco many moons ago.  It’s delicious and even lovers of gluten will love them.

    This mix was the perfect base for a patriot, 4th of July dessert with fresh berries and a cream cheese base.  This recipe can easily be cut in half and baked in a round or square pan.

    The dessert is best served the day it is made but leftovers brownies can be good for 1-2 days.

    PATRIOTIC BROWNIE FRUIT DESSERT

    2 packages Double Chocolate Krusteaz gluten-free brownie mix (I bought a large box at Costco) and ingredients stated on the box (water, vegetable oil, egg)
    16 ounces cream cheese, softened
    2/3 cup sugar
    1 teaspoon vanilla
    4 cups fresh strawberries, sliced
    2 cups fresh blueberries
    2 cups fresh red raspberries
    1 cup apple jelly

    • Make brownies according to package directions and bake in greased jelly roll or sheet pan as directed. Let cool completely.
    • Beat together softened cream cheese, sugar and vanilla until smooth.
    • Spread mixture over cooled, baked brownies.
    • Top with berries.
    • Still jelly until smooth and brush over berries
    • Refrigerate dessert until ready to serve.

    Raspberry Salsa

    Raspberries have always been my favorite fruit.  My Mother grew red and black raspberries on the farm.  When we moved into our home in 1988 we, too, planted red raspberries in our yard.  Very few raspberries make their way into the house, instead being consumed right there on the spot.

    Through the years I’ve tasted several wonderful commercial raspberry salsas and it was time to make one from scratch.  Several recipes call for tomatoes but I’m a raspberry purist and didn’t want to ruin the tart, tangy goodness of fresh raspberries.

    The salsa was good with tortilla chips (I’m thinking a cinnamon chip would be great with it!) and as a side to fresh grilled salmon.  The salsa would be wonderful with a grilled or broiled chicken breast as well.

    Our summer bounty will fast come to a close so enjoy while you can! Also try the fresh peach or tomato salsas:

    FRESH RASPBERRY SALSA

    2 cups fresh raspberries
    1/4 cup chopped sweet onion
    3 tsp.  finely chopped jalapeno chile peppers
    1 clove minced garlic
    1/4 cup chopped fresh cilantro
    1/2 tsp. sugar
    3 tablespoons fresh lime juice

    • Combine raspberries, sweet onion, jalapeno, garlic, cilantro, white sugar and lime juice.
    • Cover and chill in the refrigerator at least 1 hour before serving.
    • Optional: Mash berries slightly before chilling and garnish with whole raspberries.

    Easy Peasy Appetizer…Mozzarella and Raspberry Chipotle Jam

    Now that I’m MUCH older, I’m feeling a little lazy around the postings so taking it easy for a week or two and celebrating the rest of my birthday month.

    Even though I’m feeling lazy, sometimes you want a wonderful appetizer but don’t feel like putting a lot of time into it.  Are you with me?

    Many years ago a popular appetizer was a brick of cream cheese with jalapeno jelly and it is still a favorite but I like to shake it up a little.  I purchased a fantastic jar of Shirley Ann’s Raspberry Chipotle Jalapeno Jam a while back and paired it with slices of Buffalo Mozzarella with crackers and sliced baguette. Yummo! It would be equally wonderful with a fine Brie.

    Dutch Baby Pancakes with Fresh Fruit

    Pancakes…not my favorite EXCEPT for the Big Dutch Baby Pancake with fresh, seasonal fruit.  I discovered this recipe in the early ’80s in my tried and true ‘Sunset Ideas & Recipes for Breakfast & Brunch’.    The pancake is easy to make, spectacular to serve and yummylicious to eat.

    It was a surprise, the first time I made it, to see that the pancake rises as it cooks and collapses when taken from the oven.  Relax–it’s part of the fun!

    The original Dutch Baby Pancake was served with powdered sugar and wedges of lemon, but I’ve never tried anything but the pancake with fresh seasonal berries and fruit.  Fresh strawberry in the spring is wonderful and brings excitement about the spring and summer days to come.  My absolute favorite is fresh peach and raspberry.  The combination of the peaches and raspberries are divine.  Today, with fresh Colorado Palisade peaches and fresh raspberries, our family with savor the summer’s sweet peach harvest until we can enjoy again next summer.

    BIG DUTCH BABY PANCAKE

    3-5 Quart pan (iron skillet, paella pan, or large skillet or round baking dish)
    1/3 cup butter
    4 eggs
    1 cup flour
    1 cup milk

    • Place butter in pan and set in a 425 degree oven.
    • While butter melts, mix batter quickly. Put the eggs in a blender or food processor and whirl at high speed for 2 minutes.
    • With motor running, gradually pour in milk, then slowly add flour; continue whirling for 30 seconds.
    • Or, in a bowl, beat eggs until blended; gradually beat in milk, then flour.
    • Remove pan from oven and pour in batter.  Return pan to oven and bake until pancake is puffy and well browned (20-25 minutes), depending on pan size.

    After baking I use a spatula to assure the bottom of the pancake has not stuck to the bottom of the baking pan. Move to a pretty round plate or platter.  Fill with fruit, sprinkle with powdered sugar.  Have a shaker or bowl of extra powdered sugar for those that may enjoy a little more.

    To counteract the sweetness of the pancake, I serve with crisp cooked bacon.

    You can serve is several ways. My favorite is filled with fruit:

    • Fruit:  Sliced fresh fruit (I like fresh peach/raspberry best); sprinkle with powdered sugar.  Cut into wedges and serve.
    • Powdered sugar classic:  Sprinkle with powdered sugar and squeeze thick wedges of lemon over at the table.
    • Hot fruit:  Glazed apples or pears served with sour cream or yogurt.  Or heat banana or papaya slices in melted butter or margarine over medium heat, turning until hot; serve with lime wedges
    • Canned pie filling/cherry or apple filling, add lemon juice and ground cinnamon to taste.  Top with yogurt or sour cream. Topping can be heated or cold.
