Baked Spinach Artichoke Dip for your Football Championship Party!

This Friday I’m feeling under the weather so am reposting my Baked Spinach Artichoke Dip as an idea for the coming AFC and NFC championship games.  So good and would also be great baked on potato skins.

Baked Spinach Artichoke Dip is a holiday/party regular.  This is an easy, tasty appetizer to serve for a holiday party or family gathering.

SPINACH ARTICHOKE DIP (BAKED) WITH PITA CHIPS

1 cup mayonnaise
1 cup freshly grated Parmesan Cheese
1 can (14 ounces) artichoke heart quarters, drained and coarsely chopped
1 package (10 ounces) frozen chopped spinach, thawed, squeeze to drain
1/2 cup chopped red bell pepper
1/4 cup shredded Monterey Jack or mozzarella cheese
Toasted baguette slices, assorted crackers or Pita Chips (recipe below)

  1. Heat oven to 350 degrees. Mix mayonnaise and Parmesan cheese. Stir in artichoke hearts, spinach and bell pepper.
  2. Spoon mixture into greased 1-quart casserole
  3. Sprinkle with Monterey Jack cheese.
  4. Cover and bake 15 to 20 minutes or until cheese is melted. Serve warm with pita chips, crackers or baguette slices.

PITA CHIPS:

Package pita bread
olive oil
garlic salt
Fresh shredded parmesan cheese

  • Brush pita bread with olive oil, sprinkle with garlic salt and parmesan cheese.
  • Bake pita in oven until cheese melts and bread is toasted. Remove from oven and cut into 6 or 8 wedges per pita bread.

Spanakopita Bites

New recipes are such fun for me and I loved the idea of Spanakopita bites.   Spanakopita is a favorite but would never have the patience to make the real deal.  I had no idea that you could buy phyllo cups at the local grocery store but they make simple work of this yummy recipe.

The recipe is simple and the results are great.  The bites can be served hot or at room temperature.  Either way, you’ll enjoy!

SPANAKOPITA BITES

30 frozen phyllo cups (2-15 count packages)
1 Tablespoon extra virgin olive oil
1 small onion, minced
2 garlic cloves, minced
salt & pepper
10 oz. frozen spinach, thawed then squeezed dry
6 oz. crumbled feta cheese
1/4 cup chopped fresh parsley
pinch ground nutmeg
1 egg, whisked

  • Preheat oven to 350 degrees then place phyllo cups on 2 baking sheets and set aside.
  • Heat olive oil in a skillet over medium heat.
  • Add onion, season with salt and pepper, then sauté until translucent, about 5 minutes. Add garlic and sauté for 30 more seconds then transfer mixture to a large bowl and cool slightly.
  • Add spinach, feta cheese, parsley, nutmeg, and egg then stir to combine.
  • Spoon mixture into phyllo cups then bake for 12-15 minutes, or until cups are golden brown around the edges.
  • Serve hot or at room temperature.

Mini Corn Dog Muffins…addictive finger food

This past weekend my older daughter, Megan, and I hosted a baby shower for younger daughter, Sarah, due April 27.  Megan did all of the planning and the food was to be ‘baby size’.  One of the recipes that we chose was Mini Corn Dog Muffins.   Served with mustard and ketchup they were a big hit for the little ones and grown-ups alike.  Let me warn you…they are addictive!

MINI CORN DOG MUFFINS

1/2 cup melted butter
1/2 cup sugar
2 eggs
1 cup buttermilk
1/2 teaspoon baking soda
1 cup cornmeal (yellow)
1 cup flour
1/2 teaspoon salt
8-10 all-beef hot dogs, cut into 1/2 inch pieces

  • Preheat oven to 375 degrees.  
  • Combine butter and sugar in a bowl and whisk to combine.  Add eggs and whisk to incorporate.  Add buttermilk and whisk again.
  • In a separate bowl, combine baking soda, cornmeal, flour and salt.  Stir to combine. Whisk into wet ingredients.
  • Spray mini muffin tins with non-stick spray.  Spoon 1 tablespoon of batter into each mini muffin cup.  Place one hot dog bite into the middle of each cup.
  • Bake for 8-12 minutes (oven temperatures may vary) or until cornbread is golden brown.  Cool in mini muffin tin for 5 minutes before removing and serving. I found using a small bamboo skewer was the perfect way to loosen the edges of the muffins to remove from the muffin tin.
  • Serve with sides of mustard and ketchup.
  • Store leftovers in the refrigerator and re-heat for 20-30 seconds in the microwave before serving.

Salmon Ball Appetizer…Skinny Treat!

Salmon is a favorite and flavorful, skinny recipes are even better. Easy, tasty and skinny. Can’t beat that!

SALMON BALL APPETIZER

2 cups canned salmon, drained, flaked, and skin/bones removed
8 ounces reduced fat cream cheese, softened
1 tablespoon finely shopping onion
1 tablespoon fresh lemon juice
1 teaspoon prepared horseradish
1/4 teaspoon salt
1/4 teaspoon liquid smoke
1/2 cup chopped almonds
3 tablespoons chopped parsley

  • Combine the salmon, cream cheese, onion, lemon juice, horseradish, salt and liquid smoke. Mix thoroughly. Refrigerate for a minimum of 4 hours until firm. Form into a ball.
  • In a separate bowl, combine the almonds and parsley. Roll the salmon ball into the almond/parsley mixture. Refrigerate an hour until chilled.
  • Serve with vegetables (or crackers).

Brie is truly my favorite cheese or all time.  I love it plain, baked in pastry with jam or simply topped with honey or jam. It is a simple, elegant, crowd-pleaser every time.

Grape and Goat Cheese Bites

As daughter Sarah and I planned for appetizers for their wedding reception, we found this Grape and Goat Cheese Bite appetizer.  What’s not to like…goat cheese, pecans and grapes.  Simple.  Luscious.  And, again, a Pinterest find.

GRAPE AND GOAT CHEESE BITES

  • Finely chop pecans in a food processor.
  • The hardest part of this recipe is rolling the goat cheese into balls.  Only take a small amount of goat cheese from the frig at a time since it is easier to roll when cold.
  • Roll room temperature goat cheese balls in chopped pecans (so nuts will easily stick to goat cheese).
  • Put goat cheese ball on a toothpick and top with a fresh, washed green grape.  Voila!

Strawberry Bruschetta

Ok, I’m on a Pinterest roll this week.  I LOVE this website and used so many ideas from Pinterest for both daughter’s weddings.  I noticed several family and friends pinned this Strawberry Bruschetta and I had to try it.  It is amazingly simple yet fantastically delicious.  I’m made it for parties, assembled and ready to serve.  It’s like dessert for an appetizer.  It feels soooo right.

STRAWBERRY BRUSCHETTA

1 cup strawberries, hulled and diced
1 tbsp. sugar
1 French baguette
4 oz. goat cheese
1 tbsp. olive oil
2 tsp. balsamic vinegar
¼ cup minced basil leaves
Freshly ground black pepper

Combine the  strawberries and sugar in a small bowl; toss to combine.  Let the berries sit for about 30 minutes so that they begin to release their juices.  Spread a thin layer of goat cheese on top of each baguette slice.  Top each slice with spoonfuls of the strawberry mixture.  Drizzle lightly with olive oil and balsamic vinegar.  Top each slice with the basil leaves and cracked pepper, to taste.

Black Olive Tapenade Appetizer

This recipe has become a favorite of my gal-pals and friends for appetizers and potlucks.  Olive Tapenade would be a great appetizer for your New Year’s Gatherings. It is so easy, especially using my favorite dicing tool, the Vidalia Chop Wizard, to make easy work of the dicing, resulting in uniform pieces.

BLACK OLIVE TAPENADE

1 can pitted black (or kalmata) olives, drained
1/4 cup chopped walnuts 
3 tablespoons capers, drained
chopped red bell pepper
3 tablespoons olive oil
1 1/2 teaspoons fresh rosemary leaves, minced
1 teaspoon Italian seasoning
2 cloves garlic, minced
assorted crackers, sliced French baguette

Finely chopped the black olives, walnuts and red peppers. Add olive oil, capers, rosemary, Italian seasoning, and minced garlic; stir together.

Spoon into serving dish.  Garnish with fresh rosemary sprig or sprinkle of diced red pepper. 

Optional: spread crackers with goat cheese and top with tapenade.

Recently I discovered this recipe on the bag of mini peppers I bought at Costco.  I’ve experimented with the recipe and love a variation of this recipe, combining goat cheese with the Savory Seasoning of Tarragon Shallot Citrus.   The sweetness of the red peppers combined with the goat cheese and citrus blend is scrumptious. When the peppers come out of the oven, you can also top with half of pecan (or walnut).  A very simple appetizer for your holiday parties.

Mini Red Peppers stuffed with herbed goat cheese

Mini Red Peppers
Softened goat cheese (or cream cheese)
1/4 cup snipped fresh herbs (chives, parsley, thyme, basil) or Savory Seasoning Tarragon Shallot Citrus Seasoning

 

 

 

 

 

 

 

 

  • Heat oven to 350 degrees.  Rinse red peppers and cut a slit down the side of the pepper.  Remove seeds.

 

 

 

 

 

 

 

  • Combine softened cheese and herbs.  Place a heaping teaspoon of the goat cheese mixture in each pepper.  Bake for 20 minutes until peppers are soft-crisp and goat cheese is hot.
  • Optional: Serve with pecan or walnut half (or basil leaf) on each pepper.
